Rather than relying on vegan cheeses, which are notoriously difficult to get to the proper melting point, this vegan quesadilla recipe instructs hopeful chefs on creating a creamy vegan cheese substitute with all the flavor and the ideal creamy texture to highlight its black bean filling.

Ingredients
- 8 vegan tortillas
- 1 15-ounce can of black beans, drained
- 1 1/2 cups of raw cashews
- 1/4 cup of nutritional yeast
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 5 tablespoons of fresh salsa
Instructions
- Soak the cashews in water overnight, allowing them to swell and absorb as much as possible. If you don’t have time for a long, overnight soak, you can submerge these cashews in boiling water for an hour for a similar effect.
- Remove the cashews from the water and place them into a food processor. Blend until they’ve taken on a creamy, almost buttery texture. This process may take as long as four or five minutes.
- Add the spices, salt, nutritional yeast, and salsa. Continue blending until all the ingredients are fully combined and have the texture of a traditional cheese sauce. If the substance seems dry, you may add a few additional spoonfuls of salsa, until it has achieved the desired texture.
